ZA’ALOUK: A love recipe
As a chef at Tajine, a charming organic vegetarian and vegan restaurant in Santa Fe, one of my favorite dishes to prepare is our signature Moroccan zaalouk.
This traditional spread is made with roasted eggplants, tomatoes, garlic, and a blend of warm spices including Ras Elhanout. The result is a fragrant, flavorful spread that is perfect for dipping or spreading on Pita bread.

To prepare the zaalouk, I start by roasting the eggplants and Bell peppers over an open flame until they are soft and tender. I then combine them with the tomatoes, garlic, and spices to create a smooth, almost creamy texture.
